I haven't checked out the GISA all star teams yet that you posted but here's some players from my school that I know of that were on those teams in all star games:
1988- QB Todd McBroom =6'1" and 150lbs and had @ 1,400 yds passing that season
1987 - LB Brock Lanier = 6'4" 230lbs and C Jay Matthews 6'0" 210lbs
1984 - TB David Trice = 6'0 190lbs and had @ 1,200 yds rushing
